Thoughts on Making Dried Fruits
Until I got involved in agriculture, I wasn't someone who particularly cared about the taste of fruits or vegetables.
I wasn't really paying attention to it.
I thought that fruits are sweet and vegetables just taste like their respective vegetables, and that was all there was to it.
However, by becoming a blueberry farmer and engaging in agriculture, I learned that there are significant differences in taste based on the variety, cultivation methods, and the care taken.
The feeling you get from making dried fruits is that the taste of the fruits and vegetables you have grown is concentrated just as it is.
Sweet fruits become sweeter, and fruits with strong acidity become more sour.
Conversely, items that do not have a clear flavor in their raw state do not exhibit much character even when dried.
Therefore, we are creating dried fruits and dried vegetables that highlight the flavors of the agricultural products made with as little chemical fertilizers and pesticides as possible, and with great care and effort. We are continuously testing the drying temperatures and times to produce our products every day.
I hesitate to add sugar or additives to make dried fruits, as it feels like it would change the flavor of the agricultural products.
We also want to use locally grown agricultural products and those produced by farmers who cultivate with unique characteristics, whether local or not, to create dried fruits and dried vegetables, and deliver them to many customers.
When people try the dried fruits and dried vegetables from BLUE BLUEBERRY FARM, I sometimes receive comments like, "They're so delicious!! They're completely different from any dried fruits I've had before," or "They're more moist than I expected, and I can really taste the fruit!" At those times, while I feel "happy," I am more relieved, thinking, "I was able to convey the taste of the agricultural products well. That's great."
BLUE BLUEBERRY FARM believes that by producing dried fruits and dried vegetables, we can fulfill the role of "connecting" the thoughts of farmers and the thoughts of those who eat.
We want to create dried fruits and dried vegetables to respond to those who are particular about the deliciousness, health, and environment of agricultural products themselves, and to convey information about how agricultural products are made.
