Kumakko Farm, located in Akiu, Sendai, grows 80 different kinds of vegetables in small quantities each year, while carefully cycling the fields. These precious vegetables are grown without the use of pesticides or chemical fertilizers, and only high-quality organic fertilizers such as compost and bokashi.
The ingredients for our dried carrots are cut up and dried after we ask our delivery members to give us carrots that are damaged, broken, or too large to be delivered to our specified standards.
I always think that the vegetables from Kumakko Farm have a simple, straightforward taste. They have the sweetness, greenness, spiciness, and bitterness that you would expect from vegetables that have grown freely. In particular, the carrots harvested in winter grow slowly over a long period of time, so they are almost as sweet as sweet potatoes. When they are dried, the sweetness stands out even more, and they are so delicious that you won't be able to stop eating them once you start.
Depending on what we buy, we may or may not have colored carrots mixed in. The ratio is also not constant.
The carrots are not julienned, but cut into slightly larger pieces. When dried, they become the same size as dried squid, so the best way to enjoy them is to slowly chew them as a snack! We recommend rehydrating them in water or lukewarm water and using them in your cooking. They have a crunchy texture and a richer flavor than raw carrots. They are delicious in stews and sautes, or rehydrated in vinegar and sugar to make pickles or carrot rapées.
