Akaishi Farm is located at the foot of Mt. Iwaki, in a fertile area where meltwater rich in minerals flows. Mr. Akaishi, who took over rice farming and apple farming that have continued since the Taisho era, wants to protect the rich soil for the long term into the future, and he uses organic fertilizers such as fish waste and oyster shells to create soil that utilizes the microorganisms in the soil.

Aomori's long, cold winters require time for important pruning. This is the most important task in order to produce delicious apples two or three years from now.

The apples are harvested by being left to ripen on the tree until the snow falls. As the emphasis is on taste rather than appearance, the apples are unevenly colored and do not turn bright red. This is because the apples are grown without removing the leaves, allowing them to absorb plenty of sunlight and develop a rich flavor.

We had Akaishi Farm taste the dried apples, and they were amazed: "They're so sweet, even though they don't contain sugar!" The unique characteristics of the apples, which are cultivated using special methods, are two or three times more pronounced in the taste when they are dried.

It has a honey-like sticky sweetness, a punchy sourness, a strong aroma and a very rich flavor. Just one piece of this dried apple is enough to leave you feeling satisfied, so be sure to give it a try.
