Tomatoes are usually harvested when they are still slightly green and firm before ripening, so that they do not crack during transportation. Also, tomatoes that are not shaped properly are considered non-standard products, making them difficult to sell and sometimes being discarded.
However, tomatoes that are harvested late and ripen on the vine are actually very delicious. When they dry out and lose moisture, the flavor becomes concentrated and the deliciousness stands out.
Thanks to these delicious tomatoes, which are perfect for dried products, we were able to create delicious dried tomatoes with an exquisite balance of sweetness and acidity.
