Kumakko Farm, located in Akiu, Sendai city, grows 80 different types of vegetables in small quantities each year, cycling the fields closely. These are all precious vegetables that are grown without the use of pesticides or chemical fertilizers, using only high-quality organic fertilizers such as compost and bokashi.

Overwintered yacon is harvested before the snow falls, overwintered in the soil, and stored in sawdust in a storage shed in the spring.

It is extremely sweet. When eaten raw, it has a fresh texture like a pear, and is recommended in salads and lightly pickled dishes, but it is also delicious when heated and served as kinpira. I had no idea what it would taste like when dried, but the sweetness and moist texture are similar to dried sweet potatoes, and it still has a slight crunchy texture, so it is similar to dried radish or dried apples. I would like you to try it as it is, first of all.

It is recommended to soak it in warm water and use it in stir-fries, simmered dishes, or as a salad. Its subtle sweetness is addictive, so I think it would be delicious to cut it into small pieces and add it to yogurt with dried fruit or cereal.

It is said to have the highest content of fructooligosaccharides among all vegetables, and is also rich in dietary fiber, making it a great ingredient for improving your intestinal environment. It is also low in calories and sugar, so it is a dish that you should definitely eat regularly to lose weight and maintain your health.
